farano: Wash the tomatoes and blend alongside the fresh pepper. Boil for few minutes, lets say 2 - 4 minutes , and pour the tomato paste into a sieve and allow to sieve out the water. It wouldn't leak if you pour gently.

The secret of loosing the sour taste is in the sieve of the tomatoes and frying with lots of oil which could be filtered out after frying. It works perfectly for me.

Sieve blended tomatoes ke? I rather cook my stew the way I have been cooking it for the past 20years which has never had soured taste.

You´ll notice that even in the spoon, the tomato will continue frying (showing heat bubbles) for a few seconds before it stops. Then you´re good to go. Go ahead and add your meat stock and enjoy your tasty stew.My grandma taught me this, so it has been working since like forever. But the ish is that you can´t leave the kitchen o. You have to stay there and continue stirring the tomato while frying to avoid getting burnt and turning black or darker than you like. It takes time and requires patience.

One secret though...you can reduce the water content by boiling the tomato immediately after blending it. When it gets very thick and almost without water(same thickness as tin tomato), then you can start frying. The boiling reduces frying time, thereby reducing the time you get to spend in the kitchen cos while boiling, you don´t need to stir it, just monitor with your eyes.

That's so perfect. I reserved a space to type something like this but you have saved me the stress.

I don't understand the "sieving tomato concept" at all.

Nutrients in the tomatoes will lost through sieving method and this makes me a poor cook if I allow it.

Op is so on point. Nice of you to be generous with the info. I have meant to and have kept postponing my desire to post this.

I suggest people should give it a try . I have tried it severally and there is no comparison weather the tomato is fresh or not. In fact those big red fine ones in my experience have the most sour taste.
I use porous bag .like the akamu type to drain mine. The snag is that it reduces the quantity of the tomato.as for the vitamins if you fry to madness as some people suggest. I don't think any vitamin would survive so this method is still superior . the taste is always well worth it. You don't have to fry it to madness with this method so it saves gas and makes the stew taste fresher.

I also agree that some species are less sour than others and might not need the method. But they are not as common. Also when buying in baskets I first taste the tomato before buying. If the available speciee is too sour I postpone my bulk buying.

Unripe, forced-ripe or spoilt (esha) tomatoes give sour taste in stew, but with well riped and good tomatoes give great taste to well cooked delicious stew. #salivatingAlreadyAtTheAroma

Learnt this from a chef.
Wash ur tomatoes and pepper and boil for some minutes. The water(clear water) will naturally seperate from d tom/pepp.
Sieve and blend. Add ur onions,garlic and ginger and then cook to dry while turning to avoid burning.
Once u feel d water has dried very well, add little oil and fry(not deep frying)

The taste is never the same with blended before cooking tomapepp.

kai thank God say no be me and you dey house, I go sit down for your matta eh until you chop the stew finish and if na my money finance the stew, sharperly I go demand for refund with interest on top am because of the torture by hunger my belle go, go through. But seriously of what use is sacrificing essential nutrients needed by the body for continuous proper function, for taste ? I like mayblossom method, even though some of the nutrients get lost through evaporation by boiling abi steaming of the tomatoes.

op you are just eating color and palm oil, mix tomatoes with bell pepper, you should be fine

at times instead of seiving out d water, u can boil till d water completely evaporates b4 frying with much oil.
