I'm sorry that shows how lazy you are or maybe you are too rich to have time for your business.

1st. Get rid of your manager asap.
2nd recount all the things you Have in the store and have a separate register for them
(If you know how to use computer, you can store and record your sales immidiately)
3rd, hire a new manager, orientate him/her about how you want your store to be run.(He/she needs to give you a daily log sales
4th, Always cross check the Log book with what is in stock(that is where u need to discipline yourself, other wise sorry will be your name o).

I hope this little tips help.

If the goods is too many to count and record, how then did you know that your manager is "stealing your money everyday"? methink you are freaking out unnecessarily due to the fact that you don't know a jack about biz management. If you cannot keep record of a biz, you are fvcked even if you are managing the biz yourself.

Computerize your operations.

Ensure you have a POS system for monitoring stock and install an IP Camera.

I also feel all you have is a hunch that your money is being stolen. You might simply not be making what you thought you would be making. This does not mean your goods are being stolen.

Just get an accounting system with receipt printer and make sure you manager uses it to sell. If he doesnt deduct the shortage from his salary he will be forced to use the system to sell.
Whenever you have stock record them into the system and ensure your customers ask for receipt before they leave.
Do a stock count every month.

You are good to go
