Since it seems most bakers in nigeria say they have to add alcohol to their cakes to preserve them?

It depends on the kinda cake, n how long you want to preserve, if you sure it will last 2 - 7 days @ most then there's no need for alcohol

My Mom uses lime or lemon as cake preservative, lasts about a week. you can request for this.
