So, corn is in over here and I’m sure most of you have had a taste of it, either roasted or boiled. However, how many have actually had it as your main meal?

Well, it’s pretty easy really. Just cook a pot of beans and add corn…voilà! you’ve got adalu. (hahaha… kidding!) Honestly, it isn’t all that hard to cook once your’e able to follow these steps and believe me, the results will be so worth it.

Ingredients

Beans (oloyin preferably)
Corn (fresh or canned sweet corn)
Tatashe (red bell pepper)
Rodo (habarena pepper / scotch bonnet)
Onion
Salt
Palm oil
Olive oil or Groundnut oil
Seasoning cube
Your timing will depend on the quantity of food you’re cooking.

Preparation

Once your beans has been rid of stones, shells and other unwanted particles, rinse and pour into a pot of hot water
Slice 1/2 of the onion into the cooking beans
Crush your seasoning cube into the mix and allow boil till the beans is well cooked
Tip: cook with moderate amount of water so the beans doesn’t get mushy or runny. Also, some people add seasoning towards the end of their cooking but I like to add it at the beginning so its mixes properly with the beans.

Blend your tatashe, rodo and the remaining onions (no tomatoes)
Now, here’s the twist. If your’re using canned sweet corn, you can move on to the next stage. However if your’e using fresh corn, you should have shucked the corn first (i.e. remove from husk and silk) and boiled till it’s soft before adding beans.

When your beans is soft enough ( make sure there’s still some water left in it), add the pepper, corn and salt to taste. Stir and allow to boil.
Stir your mix and taste for salt and seasoning. Once you’re OK with it, add a scoop of olive oil or groundnut oil and palm oil. Stir and allow to boil for another 5 minutes.
Tip: heat the palm oil separately before adding to the porridge. This is because sometimes, palm oil leaves an after-taste in the mouth some find unpleasant.

Food is ready!

I love it too and this is the season you have all ingredients at your finger tip. Don't say I love food

Infact I'm over relating to this,lol! I do eat once a while for two reasons:getting those day old freshly harvested corn and then d stress off taking corn off the cob,big work if u ask me,lol!
