Taking a trip to Calabar will save you all the stress. As a Calabar boy... i ate Afang Soup in Abia State and i felt like puking. You all should come to Calabar to learn the secret behind Afang Soup.

There are "tricks" to preparing Nigerian delicacies that one can never learn from guide books or manuals.You may get it right but something will always be missing trust me.
So best way is to learn with someone who has perfected the art - it's an art really - like the real Akwa ibom or cross river man or woman.

They don't know how to prepare it, I once ate eba at aba it was a total mess, I had to eat rice throughout my stay there.

Thank you. Water leave should be put when the meat is cooked. Drain most of the stock and set aside. The water from the vegetables will suffice and you only add a little of the stock at a time, as needed. Otherwise the soup will be too watery. Afang leaves is the last to go into the pot. Don't cook for long after that or it will 'die'. Basically similar to the process for edikangikong. This picture doesn't look much like afang soup.
