In the third century A.D., Valentine was the bishop of Terni (Italy). He performed weddings for couples who were not allowed to get married. They may not have been allowed to get married because the parents did not agree with the connection or because the bridegroom was a soldier or a slave, so the marriage was forbidden. Valentine gave the married couple flowers from his garden. That's why flowers play a very important role on Valentine's Day. This did not please the emperor. On February 14, 269 AD, Valentine was beheaded because of his Christian faith.
Bottom line is.... His blood was spilt because he gave hope to the hopeless by joining couples forbidden to marry in times past. They later realised their mistake and beautified him...... Bloody hypocrites

I reckon Red is associated with Valentine's day because it signifies lust.
Red is the color of blood and fire. Earlier, someone mentioned heart blood, well you ain't exactly wrong.
Red is associated with meanings of "love", passion, desire, heat, longing, lust, sexuality, sensitivity.
If you noticed, it is associated with more raging desires. Love I believe, is more or less subtle.
Do take my words with a grain of salt.
