Here's a thought experiment:

Ghosts and witches are supposed to be human-based right? As in, they are either humans that died, or those who have a connection to that realm. Good. Ideally, ghosts and witches would only care about haunting or hurting humans, right? Of what use is a mouse to a ghost? Do ghosts also haunt mice?

Why would animals care about dead or alive humans? As in, does a bird give a shit about humans in general, whether in the flesh or in the ghost? Does a cockroach? What about a tiger or a mouse? Do they see or care about ghosts and witches? Why single out dogs?

Are there ghost dogs and witches? Are there mouse ghosts? Do ghost cats want to eat ghost mice? Why not? If a dead human can release a humanoid ghost, it stands to reason that dogs and cats and rats and roaches can also release ghosts in their respective shapes. Keep in mind that the idea of ghosts predates Christianity by hundreds of thousands of years.

If dogs and humans can perceive humanoid ghosts, it should be possible for humans to perceive birdlike ghosts.

What I'm getting at is, ghosts and witches are a human invention - existing only in the human imagination, mostly to aid the explanation of things unexplainable at the time. Dogs don't know about them, have never seen them, and don't bark because of them.

There are perfectly rational reasons for a dog to bark at night: sounds (including ultrasound), scents, or some other phenomenon like barometric pressure changes (which is how animals perceive a thunderstorm is coming)

go and buy 3k local dog and see if it'll not hear and smell a little rat in your compound before you realize you have rats.
dogs also hunt lizards too, can you hear or smell a lizard?,snake?, can you tell when another dog is passing your compound?
