I was just told that this Thursday is International Menu/Lunch Day at my job. I cannot think of anything simple but authentic to make. there is no simple-to-make Nigerian dish as far as I know. Can i get suggestions please? I don't want to make jellof rice as i did that last year and the year before I made chin chin. If I say let me make moin moin, I don't even know how to properly fold the foil to seal the paste.

make fried ripe plantain and beef stew made with oxtail and beef. but carry only the beef and chop the oxtail yasef wink

you can make the moinmoin as a casserole but beware of you know what ie the after effect.

true, there's very few easy nigerian dishes.

maybe asaro but these foreign yams can almost crack somebody's teeth. undecided

i think hauwa's suggestion might work- especially the fried plantain.

feed them eba with egusi soup stuffed with stockfish, goat meat, smoked fish etc and they will be asking you for the recipe after biting off their hands from the excessive sweetness. tongue


like the fired plantain with sauce idea hauwa suggested. the akara suggestion is good too if you can make it without it sucking too much oil.

since you did jellof rice last time, you can always do the classic white rice w/stew. if the other come short. it is rice but still different variation of it.

Thank you all. I have decided to stick with armyofone's (Hauwa) suggestion of simple fried plantain and beef stew. I can get 5 ripe plantains at my local produce store for $1.50

**p.s. I apologise for posting this here. I just realised that it should have been in the food section. Ma bad! grin
