The best time to consume bittergourd is when they are still green, they are really crunch and has that bitter taste, when it ripens, it turns yellow and no longer crunchy qnd almost tasteless when eaten but the seeds of the ripe fruit looks and tastes like candy, don't chew the seeds, just lick the red coating on it and throw the seeds away.
