Today I would be making Àkàrà (Yoruba)(English: bean cake; Hausa: kosai; Portuguese: acarajé (Portuguese pronunciation: [akaɾaˈʒɛ]) is a type of fritter made from cowpeas or beans (black-eyed peas) from Yorubaland in Nigeria, Togo and Benin. It is found throughout West African, Caribbean, and Brazilian cuisines.

The list of ingredients I used are:

1. 2 cups of dried peeled beans which I soaked with water for 2 hours (you can peel your own beans if you don’t have the type I used.)
2. 2 large onions
3. 1 scotch bonnet
4. 1 tablespoon of jumbo chicken stock to taste
5. 2 cups of Sunflower oil
