This is an ambiguous statement. The car belongs to either Joe or Fred but can't be determined in that statement.

Correct:
Joe was with Fred in Joe's car.
Joe was with Fred in Fred's car.

If it is in a Legal Document, it is impossible to prove ownership of the car in a law court.
