Bitterleaf soup, also known as Ofe Onugbu in Igbo language, is a popular Nigerian soup made with bitterleaf as the main ingredient. Here are the steps to prepare bitterleaf soup:

Ingredients:
Bitterleaf (fresh or washed dried)
Assorted meats (beef, goat meat, tripe, etc.)
Stockfish and/or dried fish
Palm oil
Ground crayfish
Ground pepper (chili or bell pepper)
Onions
Seasoning cubes
Salt
Other optional ingredients (such as periwinkle, ogiri, etc.)

Instructions:
Prepare the Bitterleaf:

If using fresh bitterleaf, wash thoroughly to remove the bitterness. You can soak it in water and squeeze multiple times until the bitterness reduces to your preference. If using dried bitterleaf, wash and soak in water until soft.


Cook the Meats:

Season the assorted meats with onions, seasoning cubes, and salt.
Cook the meats with enough water until tender. You can also include stockfish and dried fish in this step.


Add Palm Oil:

In a separate pot, heat palm oil until it becomes clear.
Add chopped onions and allow to fry for a few minutes.

Add Seasonings:

Add ground crayfish, ground pepper, and other seasonings of your choice. Stir well to combine.

Incorporate Bitterleaf:

Add the washed bitterleaf to the pot and stir. Let it cook for a few minutes to absorb the flavors.


Combine with Meat Stock:

Pour the cooked meats and stock into the pot with the bitterleaf mixture. Adjust the consistency with water if needed.

Simmer and Adjust Seasoning:

Allow the soup to simmer on low heat for about 10-15 minutes to meld the flavors.
Taste and adjust the seasoning with salt or seasoning cubes as necessary.

Serve Hot:

Onions in Onugbu soup?

Onions has no business with Onugbu ,Nsala,Oha and ofe Owerri..and this your frying method sounds really strange.
