Instructions:

1. Rinse the tigernuts and soak them in water for at least 8 hours or overnight.
2. Drain and blend the tigernuts with 5 cups of water until smooth and milky.
3. Strain the mixture through a cheesecloth or a fine-mesh sieve into a large bowl.
4. Add sugar and ginger powder (if using) and stir until the sugar dissolves.
5. Refrigerate the drink for at least 2 hours to chill.
6. Serve the Tigernut drink cold, with ice cubes if desired.
