a list of Ethio. foods (from: http://kitchentalks.com/restaurants/know-your-way-around-an-ethiopian-restaurant/)

Alitcha: mild stew made from a puree of chickpeas, which is not unlike hummus.
Kulwa: cubed lamb, chicken, or beef fried in spiced butter with chilies, onion, and berbere
Sambusa: fried dough filled with a mix of spicy vegetables or meat
Fit-fit: spicy chicken, lamb, or vegetarian stew tossed with yogurt and pieces of fried injera.

Zil-zil: shredded beef or lamb, marinaded in onions and spices, grilled
Tsebhi: fried meat, pulses or vegetables with hot pepper and fresh tomato
Tibs: cubed meat and onions in a spicy sauce
Ayib: Ethopian version of cottage cheese. In case you feel you’ve chewed on something too spicy, you can have it to cool your mouth and throat down.

Dullet: chopped liver and tripe (lamb or beef) cooked with spiced butter and chilli
Ajibo Behmilti: spinach with ricotta cheese cooked in spiced butter
Tej Honey wine: Although looks like standard white wine, it tastes a bit like mead.

here is how:

Ingredients:
3 bananas (ripe, starting to turn brown)
1 1/2 cups flour
1/4 cup milk
2 -4 tablespoons brown sugar (or white)
1/4 teaspoon vanilla extract
1 pinch salt
oil (for frying)


Directions:

1 Peel bananas and place into a large bowl. Smash them with a fork until they start to get somewhat runny. Add sugar, vanilla, milk, salt, and flour and mix until the "batter" just barely runs off of the spoon (just a little thinner than the consistency of pancake batter). If it is too thick, it will be too airy, like pancakes.

2 Heat oil in a frying pan on medium heat.

3 Once the oil is HOT, drop tablespoons of the batter in at a time, as if you were making mini pancakes.

4 When the edges are firm, turn over and cook the opposite side. The fritters should be a medium-brown color, not light and not burnt. Drain onto paper towels and serve warm. Mmm -- .

honestly. you don't even need milk..
all you have to do is mash the bananas in a bowl, add sugar, vanilla extract and some flour. add the sugar to your liking and then dry them...lol grin but that is how that person prepares theirs sooo... wink

Puerto Rico is very famous for her beverages!! cool cool

Esp. La Pina Colada... cool

[size=18pt]Piña Colada[/size]

4 oz. coconut cream
8 oz. white Puerto Rican rum
12 oz. unsweetened pineapple juice
3 cups of ice

Blend all ingredients together in blender until thick and creamy. Refrigerate until serving.

Ratio is 1 part coconut cream, 2 parts rum, 3 parts juice.

You don't have coconut cups? Don't worry just use a fancy bar glass.

Garnish using pineapple and maraschino cherries.

Puerto Rican style Guava Margaritas



[size=18pt]Guava Margaritas [/size]
Makes about 8 cups


1- 3/4 cups freshly squeezed lime juice, plus wedges for garnish
2 - 3/4 cups Don Julio Añejo tequila
1- 1/3 cups Grand Marnier
2 - 3/4 cups guava purée
Coarse salt, for rims

1. Stir together lime juice, tequila, Grand Marnier, and guava purée in a large pitcher; stir to combine. Refrigerate until chilled.

2. Just before serving, rub a cut lime around the rim of each glass. Fill a saucer with salt, and dip each glass, upside down, into the salt. Pour margaritas into glasses, garnish with lime wedges, and serve immediately.

Another PR/Carib Islands treat!! cool

[size=28pt]Island Pineapple Upsidedown Cake [/size]



3/4 cup brown sugar
1 can pineapple slices, drained
maraschino cherries

1 box yellow cake mix
½ cup Puerto Rican rum
½ cup coconut flakes
eggs (as called for on cake mix box)
oil (as called for on cake mix box)

Grease a cake pan (size called for on cake mix box).
Spread the brown sugar on the bottom.
Arrange pineapple slices on top of brown sugar.
Place maraschino cherries around pineapple.

Prepare a box of yellow cake mix following the directions, but switching ½ cup rum for water. (If cake mix box calls for 3/4 cups water, then use ½ cup rum and ¼ cup water - you can use pineapple juice instead of water), and add coconut flakes, and mix according to cake mix box directions.

Pour the batter over pineapples and cherries.

Bake according to cake mix box directions (350 degrees, etc). When the cake is done, loosen the edges with a butter knife. Allow it to rest for 5 minutes before flipping unto a serving plate. This cake is good, even warm and better on day 2.

This is a very moist and delicious cake - and so easy!

Yes but not as much as Jamaican food, the funny part I never tried roti, I definitely need to try it.

The roti and banana fritters got my attention including those delicious drinks.
